This paper discusses African American soul food. She says that other favorites of the African American are candied yams, okra, fried chicken, pig's feet, chitin's, collard greens with ham hocks, and black-eyed peas. She says that I should come visit during Thanksgiving that the tables are full of various dishes. "Many of their religious ceremonies are based on feasts, cooking, and raising food. Many of these foods are rich in nutrients, as found in collard greens and other leafy green and yellow vegetables, legumes, beans, rice and potatoes' (Ewing 1). She sadly says that her African-American grandmother has to watch her fat and cholesterol levels.
